Forks Over Knives

Forks Over Knives is a 2011 documentary film directed by renowned indie filmmaker, Lee Fulkerson. The film is centered around the idea of taking plant-based, low fat, and whole food diet in order to prevent a number of diseases. Forks Over Knives was created by executive producer, Brian Wendel and produced by John Corry.

The film gives an extensive look into the works of American physician Caldwell Esselstyn and professor of nutritional biochemistry T. Colin Campbell, suggesting that most of the degenerative and often-believed incurable diseases that afflict the masses can actually be reversed or prevented entirely. And all it takes is to avoid any animal-based food and processed food.

Forks Over Knives also delivers the findings of Professor Campbell’s 20-year China-Cornell-Oxford Project, outlined in his book, The China Study. In the book, Professor Cambell suggests that obesity, coronary diseases, diabetes and cancer are all linked to Western diet of heavily processed food and meat-based foods, including dairy products.

In the film Director Lee Fulkerson further explains the difference between taking a “whole foods plant-based diet and being vegan. He notes in a interview that “’Veganism just means anything that doesn’t have animal-based products in it. But you can still eat highly processed foods that are vegan.”

In taking a whole foods plant-based diet, consumption of processed foods are minimized if not avoided entirely.
